Flourless Oat Cookies
Oh. Em. Gee!!! I have finally put together the yummiest, healthiest, flourless, dairy-free, and soy-free oat cookies!!! And, my kids are obsessed which makes me feel so good because it’s all clean and healthy ingredients! Chocolate chip cookies are my weakness and because I’m on a paleo diet, I can’t have the traditional cookies. So, these are the perfect guilt-free chocolate chip cookies. I basically took my regular flour chocolate chip cookies and tweaked it so many times until it was perfection and suitable for my latest lifestyle. I am really shocked of how good these turned out; texture-wise and taste. And, they are so versatile - you can substitute these ingredients with anything you desire to make it suitable for your dietary needs or cravings.
You can use your favorite nut butter or mashed ripe bananas in replace of tahini, or nuts and dried fruit in replace of chocolate chips. You can get really creative and the variations are endless.
Let’s get started.
INGREDIENTS
2 cups organic rolled oats, divided into two equal parts (1 cup blended into oat flour, 1 cup rolled oats as is)
1 tbsp chia seeds
1/4 cup organic tahini (can be replaced with your favorite nut butter)
1/4 cup maple syrup
1 tbsp date syrup
1/2 tsp salt (I prefer Himalayan or celtic)
1/2 tsp baking powder
1/4 cup organic hemp seeds
1/4 cup water
INSTRUCTIONS
Preheat the oven to 350 degrees F.
Blend 1 cup of the rolled oats in a processor until fine flour
Add the 1 cup blended oat flour to the 1 cup oat flour together in a mixing bowl.
Add the chia seeds, salt, baking powder, hemp seeds and chocolate chips to the oats.
Add the tahini, maple syrup, date syrup and water to the mixture.
Mix together with a spoon until smooth.
Line a baking tray with parchment paper.
Shape the dough into 10 equal size balls and place on the baking sheet.
Press on the dough to flatten them a little.
Bake for 15 minutes.
Wait for them to cool for about 20 minutes then enjoy.
They will most likely be gone in one day LOL, but you can store them in a container at room temperature or fridge them if you plan on making a bigger batch.
